I'm having panic attacks. I'm having a fever. Is this correct? If not, what's the correct way to say it.

I'm having panic attacks. This is correct grammar. It means that you started having this condition and it sounds like they recently started.

'I'm having a panic attack', this is means you are currently experiencing a panic attack.

If you are talking about a 'fever', then you would say 'I have a fever. This is talking about your current condition.
